Ben’s Chicken and Corn Soup

Now I know I said I am mainly vegetarian these days but this is the meal I still cook for my son. It is so easy and you only need to use one pan.

I start by browning 1/2 kilo of chicken thigh fillets in a saucepan.

Add 1 can of creamed corn

Add 1 can of sweet corn

Add 1/2 litre of chicken stock

Season with plenty of freshly ground black pepper. Corn loves black pepper.

Simmer for about ten minutes

Serve with spring onion finely chopped and fresh dinner rolls

A really filling and delicious meal on its own. And so easy which makes it great for when camping.
