I have tried lots of Muffin recipes but with a bit of luck I think I’ve discovered the best recipe for soft, tasty muffins. Try this recipe in a camp oven over a camp fire but with paper muffin cups.
175 grams light cream cheese
3 tbsps. of golden syrup
3 big spoonful’s of Greek yoghurt. Use Greek yoghurt not the Greek style yoghurt. There is a difference in taste and thickness.
1 and a half cups of self raising flower
2 teaspoons of baking powder
mix the cream and golden syrup, add eggs and Greek yoghurt. Mix all the wet ingredients together then sift in the flour and baking powder. Put in muffin pans and then cook in oven for 15 minutes in 180 degree fan forced oven.
This is the basic recipe but I usually add a couple of ripe, mashed bananas. Or 1 cup of frozen raspberries and white chocolate. Or with a mix of milk chocolate and dark chocolate buttons.
Also great as savoury. Leave out the golden syrup and add a pinch of salt and some tasty cheese and chives. Let your imagination go wild.
